Healthy Vegan Walnut Cookies Sugar Free

These are very weird times we’re living in right now.  Because of Corona virus pandemic, we are all in self isolation and only leave the house when it’s necessary. I believe that this is hard for your as is for me, especially during the sunny days. But the situation is more than serious and it’s very important to stay indoors in hopes that this will all be over soon. I’m certain that you already tidied up your closets, drawers and cleaned your whole house to a sparkly shine. As I finished my cleaning phase, along came cooking phase. Making cakes and cooking is something that relaxes me. But it has its flaws. If I continue to bake every day, I’ll leave this self isolation 10kg heavier. So I decided to make healthier cookies and cakes, because if I have to pass the time somehow and nibble on snacks, let’s at least make them healthy.

Since we can’t go to the shop so often, we’re trying to use ingredients that are already at home, so I made cookies from what I managed to find.  These cookies are healthy and delicious, and best of all, they are sugar, flour, milk and egg FREE. Sounds impossible, right? Well, it’s possible, and it’s great! You can always swap some ingredients, use almonds instead of walnuts, swap honey with agave syrup…This recipe is very easy and it can also come as a breakfast meal. So let’s start!

For the ingredients, you’ll need; 50g of grated apples, 4 spoons of coconut oil or margarine, 4 spoons of apple puree, 3 spoons of honey, pinch of salt, 1 teaspoon of cinnamon, 200g of grinded walnuts, 100g of grinded oat flakes or oat flour, 1 chia “egg” and 1 teaspoon of soda powder.

Step 1

Make puree out of apples. This is quite simple; cut applesinto cubes and put in pot with a little bit of water. Stir until apples boiland turn into puree. If needed, you can mash it.

Step 2

Grate about 50g of apples. Melt 4 spoons of coconut oil, or margarine.

Step 3

If you don’t have oat flour, you can put oat flakes in ablender until they achieve a floury texture. Do the same with walnuts

Step 4

Prepare chia seeds. Put a spoon of chia seeds into a bowl,mix with 2 spoons of water and leave until it turns into gel

Step 5

Put all the ingredient into a bowl and mix them well. If themixture seems too watery, add more oat flour until it becomes compact enough tomake cookies. Put the mixture in a fridge for 30 minutes.

Step 6

Make small balls out of the mixture with your hands, andpress them gently on baking paper. Then bake them on 180°C for 15 minutes(until they get a golden color). Be careful not to overbake them.
