When we were little Sandra loved cheesecake, and I did not really.  I was a real chocoholic. The other day it occurred to me why not make a cake and connect what is dearest to her and to me. Connect cheesecake and chocolate cake. This idea sounded so tempting.  So I armed myself with biscuits, chocolate, cheese and other ingredients, and set off on an adventure. I have to admit that the cake turned out better than I expected. It was quickly finished, not baked, and the most wonderful cheesecake I have ever had, and have ever made. Adventure was successful. How I made the cake, see below.

 CRUST:

  • 230g of graham cracker crumbs
  • 4 tbsp sugar
  • 120g of butter

 FILLING:

  • 500g cream cheese
  •  4tbsp sugar
  • 1 teaspoon vanilla extract
  • 1 gelatine
  • 100ml heavy whipping cream

 TOPPING:

  • 1 milk chocolate
  • 200ml heavy whipping cream

Preheat oven to 350 degrees. In a blender, pulse graham crackers until finely ground. Add melted butter and 4 tbsp sugar. Mix it all together. Press mixture into bottom until the crumbs are a nice even layer. After that mix cream cheese and 1 teaspoon vanilla extract in one bowl, and in another mix heavy whipping cream and add it to cream mixture. Prepare gelatin according to instructions on the bag , and add in the cream mixture gently stirring. Put filling on a crumbs mixture and let cool down. Now it`s time for topping, I used Milk chocolate, but you can put whatever chocolate you like. Chop chocolate into small pieces, and put them in a large bowl. Bring 200 ml of heavy whipping cream just to a boil over medium-high heat and pour over chocolate. Stir until smooth. Pour the topping on the cooled cake and let cool again. Decorate with chopped nuts.
